Curry leaves deliver a very distinct flavor like no other. When fresh curry leaves aren't available, use dried curry leaves and saut along with the onion and other aromatics.

Curry leaves are harvested from the sub tropical curry tree and used throughout India to flavor curries, dal, rice and more. While we can't quite put our finger on the flavor profile, many describe curry leaves as a lemon-anise-asafoetida combination.
